Ella’s is a family-friendly pub that offers Roman-style pizza, Italian pub-style dishes, and larger plates. The menu is complemented by an extensive wine list and crafted cocktails, making it the perfect gathering place for any occasion. Our pizzas are also available gluten-free! We offer happy hour weekdays from 3 PM to 6 PM, and our version of Sunday Fundays, which we call “Sundays in Rome,” featuring half-price pizzas and $5 wine and beer on tap for dine-in. Can’t join us in person? We also extend our half-price pizzas on Sundays for carryout. At first glance, one might wonder what makes such a simple concept so special. It all begins with our hand-crafted dough, a process that is entirely unique to our restaurant and performed like no one else.
Unlike the shorter fermentation time of other pizzas, Roman-style pizza is known for its 2-step fermentation process—a three-day process in total!
The first stage alone requires the dough to be carefully mixed and proofed for 48 hours. Once complete, the dough is cut and weighed before being delicately balled up again to preserve the air bubbles, an element that gives it its unique texture. Finally, after 24 more hours in a cooler environment, the dough is ready to be used in our specially prepared double-bake method. This gives our crust a uniquely crispy bottom and a lighter-than-air feel with a perfectly baked top, reminiscent of a classic Roman pizza.
The effort we put into this process, along with our thoughtfully sourced local ingredients, exemplifies how our chef team has continued their passion for a fresh farm-to-fork philosophy on dining.
