    North Stars Red Wine
Drawing inspiration from the fierce competitive spirit and strong determination of St. Charles North High School, “North Stars” is a bold red wine that challenges the conventions of winemaking. Crafted from grapes harvested at the peak of ripeness from sun-drenched vineyards, this wine is a powerful expression of its namesake. Aged meticulously in oak barrels to deepen its complexity, it features an innovative twist of caramel, which is masterfully incorporated to enhance the robustness without masking the essential character of the Cabernet Sauvignon.

    Tasting Notes:

    • Appearance: Deep, intense garnet with an amber shimmer, reflecting strength and depth.
    • Nose: Robust aromas of dark cherry and ripe blackberry blend with an enticing layer of caramel, accented by hints of vanilla and smoky oak. Undertones of espresso and dark chocolate add sophistication.
    • Palate: Full-bodied and commanding, the wine envelops the palate with a rich tapestry of dark fruit flavors, including blackcurrant and plum, intertwined with smooth caramel. Subtle notes of spice, dark chocolate, and leather add layers of complexity.
    • Finish: Long and powerful, the finish delivers a crescendo of caramelized fruit and lingering spice, underpinned by sturdy tannins that signal great potential for aging.

“North Stars” red wine is crafted for those who appreciate a wine that embodies both strength and innovation. It pairs superbly with bold, rich flavors such as a St. Charles Place Filet Mignon Medallion, The Graceful Ordinary Duck Confit, or indulgent dark Brownie Chipper from the historic Colonial Cafe, making it a perfect accompaniment to a meal that’s as unforgettable as the wine itself.
