Featured selections of Craft Beers created by local Fox Valley area brewing companies.

Fortunate Day IPA
A bright, fruit-forward IPA with refined balance and a crisp, modern finish.

Fortunate Day is a fruit-driven IPA designed to showcase vibrant hop expression while maintaining balance and drinkability. The goal was a bright, aromatic beer that leans into juicy fruit character without sacrificing smoothness or structure.

A Pilsner malt base provides a clean, refined backbone, allowing the hops to shine while contributing subtle notes of fresh bread and light sweetness. As the beer warms, the malt character broadens slightly, adding depth without becoming heavy.

Featuring Mosaic, Citra, Aloha, and Simcoe hops, this IPA delivers layered aromatics and balanced bitterness. Expect a bouquet of tropical fruit and citrus on the nose, with hop character that first presents itself aromatically before unfolding on the palate. The bitterness is smooth and supportive, providing structure rather than sharpness.

A clean lager fermentation creates a dry, crisp profile that enhances clarity of flavor. The restrained ester profile keeps the spotlight on hop expression while contributing a smooth, polished finish.
Medium body with a smooth, easy-drinking texture. The finish is dry and crisp, leaving a refreshing impression that invites the next sip.

The experience begins with bright fruit aromatics, transitions into juicy hop character on the palate, and resolves with a smooth, crisp finish. As it warms, subtle malt sweetness and added fruit complexity emerge, enhancing depth without overpowering the beer’s clean profile.

Squatch of Galway
(Brother Chimp x Wolfden Collab) Style: Belgian Dark Strong Ale. ABV: 8.8%. Deep in the woods, on the brew deck and behind the bar, a legend was born. Squatch of Galway is a rich, robust Belgian Dark Strong Ale, brewed in quiet collaboration between Brother Chimp Brewing and our dear friends at Wolfden Brewing as a proper send-off for Ross, our beloved bartender, brewer and all-around legend.

Pouring a deep mahogany with a rocky tan head, this beer unfolds layers of dark fruit, caramelized sugar, and soft Belgian spice. Dark candi sugar melds with deeply kilned malts to create a lush toffee character, with warm notes of fig and raisin. Complex, balanced, and deceptively drinkable, it’s a beer meant to be savored, much like moments shared across the bar.
This beer began as a secret brew, to be unveiled in celebration of Ross’s going-away. Now released into the wild, it stands as a lasting tribute to nights behind the bar, days in the brewhouse, and a journey that leads back across the sea. Wherever Ross roams, the legend of the Squatch of Galway lives on.

On tap at Both Brother Chimp Brewing locations in St Charles & North Aurora & available in 4-packs.

Looper
IPA for Round After Round – 5.6%. A modern crisp and crushable IPA brewed with the vibrant and fruit-forward Alora™ hops. Bursting with notes of peach, apricot, sweet melon, and yuzu, this juicy IPA is a playful nod to golf caddies, the endless twists of the Penrose Triangle, and a certain mischievous gopher. Whether you’re on the green or off the grid, Looper keeps the good times rolling round after round.

Pollyanna Lexical Gap
West Coast IPA – 7.3% ABV. Sometimes, the English language just doesn’t have a word for something. There are words like YOLO, twerk, and OMG, but for some reason there isn’t a plural word for “you.” Sorry, but “ya’ll” or “youse” or even “you guys” doesn’t quite fill the lexical gap. Our Lexical Gap IPA is straight west coast, you guys (see what we did there?). Brewed with massive amounts of Citra, Centennial, Simcoe, Mosaic, and Columbus hops, finding a word to describe your gratification might be pretty tough. Most expletives, however, will probably suffice.

The Afterburn – Dry Irish Stout
5.5% ABV, served on Nitro in the taproom. This classic Dry Irish Stout embraces the intensity of flavor and character that beer enthusiasts crave. Meticulously brewed with imported Irish stout malt and carefully roasted barley. Afterburn embodies a profound darkness that is both enticing and mysterious. With every pour, its ebony hue captivates the eye, while a rich, creamy head crowns the glass presenting an enticing aroma and inviting indulgence. Savor the artful balance of roasted notes and hints of chocolate, leading to a clean, smooth satisfying finish. A perfect St Patty’s Day pour!
