    Bucatini Carbonara
    House-made bucatini, tossed in rendered guanciale and emulsified with Parmigiano Reggiano to form a rich, savory sauce. Garnished with preserved lemon, finely cut chives, crispy prosciutto, and shaved pecorino, a raw egg yolk is nestled atop and finished with freshly ground black pepper. Served warm, guests are encouraged to mix the yolk into the pasta tableside.
