Beet Cappelletti
Che Figata’s beet cappelletti is the perfect representation of locally sourced produce meshed with an Italian classic. It starts with a house-made red beet-infused pasta dough filled with a roasted golden beet and ricotta. Once cooked, the cappelletti is tossed in browned butter to build depth in the dish and play with the earthy notes from the beets. It is plated atop a “salsa di noci” — a pesto from Liguria made from milk, dried bread, walnuts, garlic, Parmesan, and olive oil, and topped with a micro green and pickled beet salad for some acidity, color and pop to both the palate and the plate.
