Restaurateur Brian Goewey and culinary partner Mike Bomberger are proud to present Ella’s Italian Pub, featuring their new Roman-Style pizza concept in collaboration with Maestro Pizzaiolo Leo Spizzirri.
Ella’s is a family-friendly pub that offers Roman-style pizza, Italian pub-style dishes and bigger plates. The menu is complemented by an extensive wine list and crafted cocktails. It’s a perfect gathering place for any occasion. Our pizzas are also available gluten free! We offer happy hour weekdays from 3 PM to 6 PM and our version of Sunday Fundays which we call “Sundays in Rome” offering half-price pizzas and $5 wine and beer on tap for dine-in. Can’t come in to join us? We also extend our half-price pizzas on Sundays for carryout. Coming soon to Ella’s, we will be offering our Wine-down Wednesday special of half-price bottles of wine on bottles priced $60 or under. No matter how you slice it, you’re sure to have a great time at Ella’s.
Brian Goewey, an accomplished chef of nearly three decades, has made it his and his passionate team at BG Hospitality’s mission to make creative and chef-driven farm-to-fork dining that brings together the whole family. With the previous successes of locally loved restaurants “GIA MIA”, “Livia”, and “moto imōto”, he is excited to add “Ella’s Italian Pub” to the BG Family and share its brand-new take on Italian cuisine with the rest of the community.
At first glance, one may wonder what makes such a simple concept so special? It all begins with our hand-crafted dough, a process that is entirely unique to our restaurant and performed like no one else.
Unlike the shorter fermentation time of other pizzas, the Roman-Style pizza is known for its 2-step fermentation process, a three-day process in total!
The first stage alone requires the dough to be carefully mixed and proofed for 48 hours. Once complete, the dough is cut and weighed before being delicately balled up again to protect the air bubbles, an element that gives it its unique texture. Finally, after 24 more hours in a cooler environment, the dough is ready to be used in our specially prepared double-bake method. This gives our crust a uniquely crispy bottom and a lighter-than-air feel with a perfectly baked top reminiscent of a classic Roman pizza.
The effort we put into this process along with our thoughtfully sourced local ingredients exemplifies how our chef team has continued their passion for a fresh farm-to-fork philosophy on dining.
