    Wood Roasted Dry-Aged Ribeye Steak

    Ribeye steak is dry-aged for a minimum of 36 days before being lightly seasoned and seared on a wood-fired grill. The ribeye is served atop a cauliflower puree that has been cooked over the hearth to absorb its smoky flavors, alongside a crispy seafood croquette, topped with salmon roe. The dish is finished with a drizzle of red chimichurri.
