Six Favorite Venues

When Paul Karas and his brother George bought The Village Squire in 1974, it had already gone through some major changes. It was originally named "The Swiss Chalet" in the 1950's, with white tablecloths, turquoise upholstered chairs, and light brown woodwork all the way up to the vaulted ceiling. After a major fire destroyed much of the building in the mid 1960's it was remodeled and renamed The Village Squire. Mostly a dark tavern lit by candles and littered with peanut shells on the floor, Paul and George promptly closed it down for a few weeks after they purchased the restaurant in 1974. In 1979, Paul and George opened another Squire in Crystal Lake, and in 1981 another one in McHenry. In 1987, the brothers tried another kind of restaurant; it was Alexander's Restaurant in Elgin.
 Alexander's is named after the Karas’ great hero, Alexander The Great, from Macedonia, Northern Greece, the region from which they hail. Alexander's serves breakfast, lunch and dinner and features fresh fish and home cooked meals made fresh on the premises, including all soups, sauces, gravies and dressing.  Specialties include the fantastic baby back ribs that simply fall off the bone, charbroiled steaks and juicy prime rib that melt in your mouth, and a wide variety of glorious burgers.
 The future of the Village Squire will remain as a family run business, as we await George Karas's 5 children, Vasili, Aleko, Eleni, Toli and Fotini, to expand the Village Squire's history.

The Anvil Club
The Anvil Club is Chicago's premier private dining club. Renowned for great steaks, chops and generous drinks, The Club's personalized service is unsurpassed.
 The Club traces its beginning’s back to the late 1800’s, when two Wagon Masters established a forge on the property. In 1911, Herman Becker purchased the forge and operated a blacksmith shop for 44 years. Then, in 1954, ten prominent Dundee area men began to dream of forming a private dinner club where they could relax and where food and service would be the very best. They learned that the old blacksmith shop on Meier Street in East Dundee might be for sale. Though weather beaten, the building was sound as a rock as so the property was purchased.
 Priority was given to retaining as much of the century-old blacksmith décor as possible, while adding furnishings from the 1900's. Marble pillars and sections of an old wood bar were located, along with the carved wood cherubs resurrected from a Chicago theatre. The tools now on the walls and the forge itself including the enormous bellows that had been operated by foot power were original implements used in the blacksmith shop.
 The Anvil Club has 5 full service Main Dining Rooms, with more casual dining in The Saddle Room, Sparkys and the Veranda. Buckingham’s - Grand Victoria Casino

Elgin Public House

At Hennessy's Steak and Seafood you won't find a steak knife at the table setting and there's good reason. Regina's Via Trent Uno

At Regina's the food is as much a delight to the eyes as a sensation for the tongue. Campanella has been featured on WGN News cooking many of his signature dishes like the savory Veal Mascarpone, which uses a touch of the velvety white cheese to accentuate the flavor of the delicate veal and vegetables.  Campanella credits his mother for teaching him the art of Italian cooking even though he has worked in the restaurant business since emigrating to the U.S. when he was only 13 years old. Campanella said he has a love of food that was instilled in him from his childhood in Sicily. Campanella opened his first restaurant, Phil's Pizzadoro, in Chicago in 1981. When the business was bought out, he opened Regina's Ristorante in Arlington Heights in 1985. He still operates that location along with the Dundee location he opened in 2005. 

"One of the things I emphasize in my cooking is I like people to be able to taste everything," he said.  It is a philosophy that shines through in some of the very complex dishes he creates like the whitefish which is served in a lemon caper sauce. At Regina's, fresh fish is delivered to the restaurant daily with shipments from Hawaii arriving three to four times per week. Campanella offers an extensive wine list and helping patrons to find the perfect wine to compliment the meals they order.
