This Week’s Dish: Sweet Potato Skillet

This one’s fast and so super easy. But it’s not terrible for you! If you have guests and you know you’ll need a quick crowd pleaser (because you’re not whipping up a quiche), or you might have a late-night need for something tasty but you don’t want to reach for the pizza….try this!

 

The base:

Frozen organic sweet potato slices (they look like scalloped potato thins)

 

Frozen organic broccoli

Frozen organic diced butternut squash

1 can organic black beans

1 bag organic cheddar or Mexican bland cheese, shredded

The Toppings:

For breakfast try cracking an egg over the top and sprinkle with cheddar before baking, and garnish with some chopped chives or scallions!

For a snack try giradinere and some cheddar with cracked pepper!

 

For a lighter version skip the cheese and crack some eggs on top, and garnish with herbs (like chives or scallions and cilantro)!
