Creamy Carrot Cashew Ginger Soup

  • 2 pounds peeled carrots, cut into 1 inch pieces
  • 3 cups low sodium vegetable broth
  • 1 cup unsweetened light coconut milk
  • 1 medium onion (1cup), diced
  • 2 cloves minced garlic
  • 2 tablespoons olive oil
  • 1/2 teaspoon cumin
  • 1 teaspoon salt
  • 2 tablespoons freshly grated ginger
  • 3/4 cup unsalted toasted cashews











Place carrots in a saucepan with broth & coconut milk. Bring to a boil. Reduce to a simmer. Cover & cook until carrots are tender (about 15-20 minutes)


Heat olive oil in a skillet. Add diced onion, garlic & cumin. Cook over medium heat until onions are translucent, about 5 minutes. Add ginger & salt. Cook another 10 minutes stirring often.

Combine carrots, cashews & onion mixture. Blend on a soup setting in batches. Reheat if needed before serving. Top with peeled carrots & chopped cashews.

Ginger Apple Roasted Chicken Breast

Marinade Ingredients


  • 1 cup apple juice
  • 1/2 cup apple cider vinegar
  • 1/2 cup vegetable oil
  • 1⁄4 cup soy sauce
  • 1/2 cup honey
  • 1 tablespoon ginger
  • 3 -4 garlic cloves









  1. In a bowl whisk apple juice, apple cider vinegar and vegetable oil
  2. Next whisk in the honey- use the same cup that you measured the vegetable oil in so it slides out.  
  3. Whisk 1 tbsp ginger.
  4. Whisk in 3-4 minced garlic cloves   (2 TBSP minced garlic)
  5. Baste marinade or put in baggies
  6. Marinade chicken for at least 5 hours in fridge.
  7. Poach chicken* with apple slices, shaved ginger, salt pepper and sprigs of thyme
  8. Roast at 350 for 30 minutes (or until fully cooked)
  9. Let sit 10 minutes before cutting/serving
* Poaching: lightly coat baking dish with butter. Put chicken breast and ingredients in pan. Lightly coat PARCHMENT paper with butter. Place butter side down over chicken and press and seal the edges of the paper to the pan around the chicken to seal in. This will lock in the moisture and the flavor off that apple and ginger! YUM!
