Gluten Free, Soy Free, Nut Free Brownies…Eat The Burbs Bakes

As promised in my last article, here is my recipe for black bean brownies.

We use the egg free (flax egg) version because we have a child that cannot eat eggs. This recipe also allows us to sneak more protein, good fats and fiber into his diet. These are so gooey and delicious. Customize and Enjoy.




1 (15 oz) can organic black beans, rinsed, drained

2 eggs or 2 flax eggs

1 ½ tablespoons coconut oil

1/3 cup cocoa powder (I also sprinkle a bit on top)

½ Avocado

1 teaspoon pure vanilla extract

1 cup Organic sugar

¼ cup chocolate chunks (use a soy free brand)

½ teaspoon Baking Powder (gluten free)

¼ teaspoon Himalayan pink salt (or less to taste)



Baking Instructions


Preheat oven to 375 degrees. Lightly oil an 8x8 baking dish or standard cake pan. (I use glass)


Combine the black beans, eggs, avocado, coconut oil, cocoa powder, baking powder, vanilla extract, salt, and sugar in one bowl. Mix with hand mixer on medium until smooth. Sprinkle the chocolate chips over the top of the mixture and lightly dust with cocoa powder (optional).


Bake in preheated oven for 23 minutes or until the top looks crispy. You may have to add up to 5 minutes of bake time.


Let cool and Enjoy.
