Truffles!  Need I say more.  Truffles are among one of the most luxurious ingredients in the World.  Italian White Alba truffles can cost up to 3,000.00 a pound.  While the French Winter Black truffles can fetch around 2,000.00 a pound.  We've never used the white until now.
This Wednesday, December 15th at 7pm, we will offer 5 courses, 4 with Alba white, Winter Black and Oregon Winter black.  All for only $75.00  Yes, that's right!  I know that this seems high but seldom do restaurants in our neck of the woods, procure truffles. Dinners like this in the city or Europe go double if not triple the cost.  I expect a rather small group and don't expect to recoup the cost but that's ok.  I'm doing this for me.  I'm looking forward to using truffles as an excuse for me to return to the kitchen.  Looking forward to using my creative chops again.  I can't wait.  Below is our menu.  Of course, it can be subject to change but that's the beauty of this whole exercise.  Hope to see you all as we break bread together right before the Holiday season.
Ahi Tuna
White Truffle, Sesame Seed, Pineapple, Ancho
Truffled Sweet Potato Soup
Sweet Potato, Oregon Black truffle, Saba Must
Red Snapper
Truffle snapper 
Roast Lamb with butternut squash roast garlic goat cheese puree
