RECIPE: GRAHAM'S 318 APPLE CAKE

Jayni Wunderlich shares her coveted apple cake recipe.

Apple Cake

Makes 1 Cake

1 1/2 C. Soybean Oil

2 C. Sugar

3 Eggs (beaten)

1 Tbsp. Vanilla

3 C. Flour

1 tsp. Baking Soda

1 tsp. Salt

1/2 tsp. Cinnamon

1/2 tsp. Nutmeg

2 1/2 C. Apples-peeled, cored & diced (about 2 big apples)

1 C. Chopped Walnuts (optional)

1 C. Raisins (optional)

Directions:

Preheat oven to 350°F. Grease a bundt pan. Beat together oil, eggs, vanilla & sugar with a wire whisk in a small mixer. Sift together the flour, baking soda, salt, cinnamon, & nutmeg. Add by hand with a spatula to the egg mixture. Stir in apples, nuts & raisins. Pour into the prepared pan and bake for about 90 minutes or until a fork or toothpick comes out clean.

Optional Cream Cheese Filling:

1/2 lb. Cream Cheese, 1/4 C. Butter, 1 C. Powdered Sugar & 1/2 tsp. Vanilla. Mix ingredients in mixer with paddle until creamy. After cakes are cooled, cut cake in half horizontally. Spread the icing in the middle and reattach the top. Dust with powdered sugar and serve!
