Gibby’s Wine Den

The 2010 Man Vinters Chenin Blanc from Coastal South Africa ($12.95) uses 100% free-run juice, which means that the grapes were not pressed but rather drained after crushing. This generally results in a higher quality white wine with less tannins because of the limited contact with the skins, seeds and stems.  The 2010 vintage saw ideal ripening conditions with its cool temperatures and ample rain.  This Chenin Blanc greets the nose with tropical fruit and melon aromas.  Its palate is crisp with sweet citrus, nice acidity and minerality.  It is a very versatile food wine that goes especially well with poultry and fish.

The 2008 Paco & Lola Albarino Rias Baixas Spain ($17.95) comes from the vineyards in Meano, the heart of Albarino wine country.  This is a beautiful, elegant and complex Albarino with citrus, green apple and basil aromas.  The flavors are fresh, crisp and well balanced with lovely acidity.  Absolutely perfect with fish, sushi and risotto.

A small, family-owned winery, Buehler Vineyards has been making wine for 36 years.  They pride themselves in using minimalist winemaking techniques to bring out the natural depth and beauty of the wine. The 2007 Buehler Vineyards Cabernet Sauvignon Napa ($19.95) is sourced from 100% Cabernet Sauvignon grapes that were grown on their estate hillside vineyard.  Red and black fruit aromas greet the nose while the rich and full-bodied palate reveals flavors of plum, black berry and cassis.  It is drinking well now and will continue to soften with age.

Art Exhibit at Gibby’s Wine Den starting November 5
Have you been looking for some original art for your home, or do you just enjoy looking at artwork? In an effort to champion the artistic community in the Fox Valley area, Gibby’s Wine Den is proud to announce a rotating art exhibit.  The first Friday of every month will be the art opening for a featured artist that will coincide with Gibby’s Friday’s @ 5 event that includes live music, food and wine.  The featured artist will have from five to twenty works of art which displayed for the entire month. Color: Slightly semi-hazed brightly shining white yellow color, with tints of orange golden hue.


Aroma: Pungent pine tree hops, strong grapefruit, lemon zest, fresh cut peachers, apricots.sweet bready buttery malts,oily piney hops,grainy toasted semi-fruity yeastiness.

Taste- The front starts off with a very creamy silky smooth mouth feel that over laps the crisp clean pungently citrusy pine forest resinous hops. In the background of the front, the beer tastes of a nice depth of fruity esters of sweet malts, and a good amount of underlying depth of semi-sweet bready buttery yeasty malts. The middle gives way to more strong pungent notes of earthy woody resinous bittersweet hops, and mingling in the back depths of the beer are more mild notes of semi-citrusy sweet and fruity grainy toasted diacetyl bready yeast notes. The finish begins with strong notes of earthy oily woody pine tree bitter hops, being followed with great depth of notes such as intense grapefruit, ripened lemon and ripened peaches, with the beer finishing with some notes of semi-sweet and tart, yeasty diacetyl toasted baked bready malty caramel sweetness, with a touch of bittersweet creamy pine tree hops.
