Restaurateurs to bring slice of Naples to St. Charles

The owners of a new pizzeria in downtown St. Charles hope to serve the community a different kind of pizza pie.

Gaetano Sorrentino of St. Charles and Tony Alfonso of West Chicago spent two weeks in Naples, Italy, this year to learn how to make authentic Neapolitan-style pizzas from 70- and 90-year-old men.

“There’s a lot to be said to be trained by a true artisan, to feel their passion,” Sorrentino said. “You’re eating love.”

He and Alfonso hope to bring Naples to St. Charles with Neo, their pizzeria located at 31 S. First St. It is expected to open June 21.

The name not only symbolizes the type of food served but also signifies that the Neapolitan style is new to the area.

Cooked in a wood-burning oven, the pizzas are lighter and airier other styles, Sorrentino said.
