Quinoa with Lemon, Greens and Spring Herbs

The Passover seder can seem challenging for plant-based souls. One possible answer is quinoa. Though most consider it a grain, quinoa is actually kin to spinach, with which it pairs beautifully. Best of all, most rabbis have deemed it suitable for Seders.
Quinoa pasta, flour and flakes don't make the cut, so go for pure, unadulterated quinoa.
Some rabbis have a stricter interpretation of Jewish dietary law than others, so to answer the quinoa question once and for all, check with your own.
